EXTENDED! As much as we adore our beloved Tuscany, we often include the traditional cuisines of Italy’s 19 other regions, which are amazingly different from one another. But this time, we thought it would be fun to concentrate exclusively on a single region at a time — a cook’s tour, if you will. So occasionally, we’ll devote our Specials menu to the cuisine of one Italian region (though our regular menu will also be available.) This weekend: Valle d’Aosta, nestled among the highest peaks of the Alps. Aosta’s hearty cuisine, rich in the local Fontina cheese (they put it in everything!) , polenta, and game, is perfect for a wintry evening by the fire.
