Don’t wait another minute to sample local ramps, those exquisitely delicious wild leeks available only a couple of weeks each spring. They came up early this year, so off I went to my secret foraging spot in the Berkshires to gather bagfuls of these pungent goodies. My favorite way to prepare them is in a piquant pesto, which I incorporate into pasta dishes and risottos.
