“Vico” means village in the Tuscan dialect, and it is our aim to build a restaurant around locally grown, seasonal ingredients from the Hudson Valley, uncomplicated preparation based on the centuries-old traditions of Italian cuisine, learning about naturally produced, small-scale wines from Tuscany and other regions of Italy as well as personalized service. It begins when you’re greeted by name at the door, and ends only when you’re completely satisfied with the time you’ve spent with us. We look forward to welcoming you into our home.
Mark Ganem serves as executive chef. He trained and worked in the Chianti region near Florence serving his inventive cuisine at a popular bed-and-breakfast to locals and travelers alike.

Columbia County Bounty is a new organization dedicated to linking Columbia County farmers with local restaurateurs. Founded by our friends David Robinson of Bezalel Gables catering and Lori Selden of Mexican Radio, the program has already made dramatic strides in bringing together those who grow and produce your food. A number of our local suppliers are members, and we’re adding more all the time!
Slow Food USA has a mission to counteract fast food and fast life, the disappearance of local food traditions and people’s dwindling interest in the food they eat.
Columbia-Greene Humane Society/SPCA is dedicated to the protection, humane treatment and well being of all animals. They are committed to community outreach, humane education and prevention of cruelty to animals. CGHS does not euthanize animals for space constraints and do not receive any federal, state or county funding.
Stageworks/Hudson is a not-for-profit Equity theater company dedicated to bringing theater productions and programs of high artistic quality to the City of Hudson, Columbia County and the Mid Hudson Valley.
The Hudson Opera House offers a year-round schedule of arts and cultural programming, community events, classes, exhibitions, and more.
At Vico, the vast majority of our meat, poultry, dairy, eggs and in-season produce is locally grown and raised in Columbia County, and that percentage is growing daily. We have forged relationships with terrific local producers, and are always on the lookout for more products to add. Below are just a few of the folks we work with.
